Canberra, the capital city of Australia, is an oasis of food and has a vibrant dining scene, while Four Rivers filled the culinary gap of dining scene, with its first kind of Sichuan style offerings.

It’s really a pleasant surprise. When the restaurant opened at the begining of 2004, people got wind of the news, and flocked to the restaurant for the new exciting dining experience.

“The restaurant was full of people and our staff were too busy to handle such a large crowd of customers then,” says owner Peisen Guan.

Featuring a long list of Sichuan delights, the menu is a bit threatening yet attractive as you will see colorful pictures of dishes drenched in red oil or mixed chilies. Sichuan food is not for the faint heart, but be prepared to start a culinary expedition at Four Rivers if you are courageous enough.

At Four Rivers, there are two menus both in Chinese and English. Given a glimpse of the menu, it well embodies the chef’s interpretations of authentic Sichuan cuisine, and his unique understanding about Australian customers’ requirements.

A thrilling journey may start with trying some of cold dishes—Husband and Wife Beef Slices(夫妻肺片); and Spicy Sauce Chicken(口水鸡).

Then explore further by digging into main course, such as Fish Hot Pot(水煮鱼) and Chilli Chicken(辣子鸡). These are the typical Sichuan - "Tongue Numbing" dishes with uniquely spicy hot, pungent flavor. while the chef approaches it with a milder Westernized version. The spicy Chicken with Sichuan Pepper has been tamed to cater to the dietary restrictions, resulting in a less spicy and boneless version of this popular Sichuan dish.

Aside from Sichuan, the restaurant adds an assortment of dim sum to balance the menu. The dim sum is served at the Cantonese tradition of Yum Cha. It is a pleasant alternative to the heat of chilli and Sichuan peppers. The selections include favorites like steamed BBQ pork buns, prawn dumplings, and sticky rice chicken.
